2004

It was in 2004, during a visit to the Cantine de Greve wine cellar in the Chianti region of Tuscany, that I discovered the Enomatic system, an innovative technology for wine tasting.

The prototype developed in an Italian winery transformed my vision of wine service and allowed me to see a multitude of commercial prospects. A few months later, in December, I was already embarking on the wine-by-the-glass adventure with Canada’s first Enomatic machine.

In 2007, the Enomatic system arrived at the Société des alcools du Québec (SAQ), which uses it at its laboratory branch in Laval—among other locations—to allow customers to taste wine before purchasing. A concept that will quickly be taken up by the Liquor Control Board of Ontario (LCBO) and in many other Wine stores.

That same year, the Château Laurier in Quebec City to adopt the system to offer self-service wine, while Novello in Boucherville became one of the first restaurants to offer high-end wine by the glass.
