Kimpton The Forum Hotel opened in 2023 on the grounds of the University of Virginia’s Darden School of Business, with 198 guest rooms, 10 suites and a five-acre arboretum. Its dining program includes Birch & Bloom, a steakhouse, the Aspen Bar & Terrace and the Good Sport taproom.
At Birch & Bloom, Enomatic Unica dispensers let the team offer a rotating selection of wines by the glass in precisely controlled portions. Each bottle is preserved under inert gas, so every pour is as fresh as the first.

Pour + preserve — each bottle is preserved separately under food-grade nitrogen (E941) or argon (E938), with up to 3 configurable servings per bottle.
Control + connect — color touchscreen, RFID reader and LAN/Wi-Fi connectivity for real-time service monitoring.
Build + customize — stainless steel, colored or glass finishes, with customization options on request.
