A self-pour wine dispenser built for ramen night, one pour at a time
At Jinya Ramen Bar‘s Ally Charlotte Center location in Uptown Charlotte, an Enomatic Unica self-pour dispenser puts a rotating selection of wines by the glass alongside the restaurant’s tonkotsu ramen and izakaya-style small plates.
Guests browse the dispenser and pour their own 1.5, 3, or 6-ounce samples, or a full glass, with each bottle preserved under nitrogen vacuum technology so every pour tastes as fresh as the first.
Set near the bar, the wine wall gives guests something to explore while they wait for a table or between courses, pairing a crisp white or light red with ramen without needing to flag down a server for a taste.
For the Jinya team, the self-pour format means no opened bottle goes to waste and no staff member is tied up pouring samples – a simple way to add a wine program to a restaurant built around fast, casual ramen service.

The wine dispenser at Jinya Ramen Bar is built on Enomatic self-serve dispensing technology, designed for precise preservation, portion control and guest-facing service.
Pour + preserve – each bottle is individually preserved under food-grade nitrogen (E941) or argon (E938), with up to 3 configurable pour sizes per bottle – here set to 1.5, 3, and 6-ounce pours.
Chill + display – adjustable temperature zones and full bottle visibility keep every wine ready to pour and easy to browse.
Control + connect – 7-inch color touchscreen and RFID reader, so guests tap a prepaid card to pour their own tastes, with LAN/Wi-Fi connectivity for real-time service tracking.
Build + customize – stainless steel, colored or glazed finishes, with customization options available on request. Configured here as a countertop dispenser near the bar, letting guests pour their own wine, glass by glass.
