Prime: An American Kitchen & Bar sits at 78 Southfield Avenue on Stamford’s South End waterfront, where tempered glass walls look out over Long Island Sound and the marina, and fold open when the weather allows. Opened in 2016, the kitchen builds its menu around USDA Prime 21-day dry-aged beef, a raw bar and sushi, with an outdoor deck and cabana bar at the water’s edge.
Wine has always been central to the room. An illuminated, climate-controlled glass wine room holds more than 750 labels, with separate temperature zones for whites and reds, visible from the dining room and from the boardwalk outside.
The Unica installed in the bar extends that cellar to the glass. Eight bottles sit under inert gas at serving temperature and are poured by the bar team, so the Napa and Tuscan reds a guest might hesitate to order by the bottle become something they can taste first — a small pour alongside the raw bar, a full glass with a dry-aged steak.
Technical Features
Wine service at Prime Stamford is built on Enomatic dispensing technology in the Unica 8R cabinet, a self-contained, glass-fronted unit with eight positions, installed here for service by the bar team rather than as a guest-operated wall.
Pour + preserve – each bottle is individually preserved under food-grade nitrogen (E941) or argon (E938), with up to 3 configurable pour sizes per bottle, from a taste to a full glass.
Chill + display – adjustable temperature zones behind a full-length glass front, keeping every label lit and legible from the bar.
Control + connect – touchscreen modules with RFID card control on every position, with LAN/Wi-Fi connectivity for real-time pour and inventory tracking.
Build + customize – stainless steel, colored or glazed finishes, with customization options available on request. The same cabinet is offered in a four-bottle version (4R), and either size can be configured for guest self-service where the room calls for it.
