Bar Romy

An Italian-inspired wine bar in Toronto’s Entertainment District

Enomatic dispensers are built into the back bar, under arched glass cabinets.

Italian cooking, and wine poured by the glass

Bar Romy opened in July 2026 at 295 Adelaide Street West, at the corner of John Street. Created by INK Entertainment, it is an all-day Italian bar in the spirit of a neighborhood spot, with a menu of pasta, Roman-style pizza, house-made focaccia, sandwiches and antipasti from chef Ben Heaton, a curated wine list and a wraparound corner patio. Interiors are by Nivek Rimas.

Two Enomatic dispensers are built into the back bar, beneath arched glass cabinets framed in the room’s signature orange. Open bottles stay preserved under inert gas between pours, so the list can be served by the glass.

Technical specifications

The wine station at Bar Romy is built on Enomatic’s Unica Start technology, designed to preserve open bottles and pour them in controlled portions.

Pour + preserve — each bottle is preserved separately under food-grade nitrogen (E941) or argon (E938), with up to 3 configurable servings per bottle.

Build + customize — stainless steel, colored or glass finishes, with customization options on request.
