At Ember & Oak, the steakhouse’s Wine Room in Melbourne, Florida, a pentagon of five Enomatic Unica dispensers forms a wine tower at the center of the room, pouring wine by the glass alongside the restaurant’s existing 64-bottle wall.
Twenty wines are on tap across the five-sided tower, each bottle preserved under temperature and pressure control for more than 30 days, so every pour tastes as fresh as the first.
Built from five 4-bottle Unica units joined with corner kits into a single pentagon, the tower turns the center of the Wine Room into a destination of its own, inviting guests to walk around it and taste freely.
For the Ember & Oak team, the tower complements the eight-dispenser wall already pouring wine at the bar, doubling the ways guests can explore the list without opening a bottle they might not finish.
