At Elliotts on Linden, chef Mark Elliott’s farm-to-table restaurant in Pinehurst, North Carolina, a self-pour wine wall lines the back bar in The Roost, the restaurant’s lounge – extending a wine program already recognized as one of the best in the state.
Dozens of wines are on tap by the glass, available in 1, 3, or 5-ounce pours, with each bottle preserved under nitrogen vacuum technology for weeks after opening, so every pour tastes as fresh as the first.
Set behind the bar in The Roost, the wine wall lets guests browse and compare bottles freely – from a bold red to a crisp white – before settling on a glass or a bottle to pair with dinner.
For the Elliotts on Linden team, the self-serve wall means guests can taste more broadly without opening extra bottles, and staff can focus on service instead of pouring flights one at a time.
Technical Features
The wine wall at Elliotts on Linden is built on Enomatic self-serve dispensing technology, designed for precise preservation, portion control and guest-facing service.
Pour + preserve – each bottle is individually preserved under food-grade nitrogen (E941) or argon (E938), with up to 3 configurable pour sizes per bottle – here set to 1, 3, and 5-ounce tastes.
Chill + display – adjustable temperature zones and full bottle visibility keep every wine ready to pour and easy to browse behind the bar at The Roost.
Control + connect – a 7-inch color touchscreen and RFID reader let guests tap a prepaid card to pour their own tastes, with LAN/Wi-Fi connectivity for real-time service tracking.
Build + customize – stainless steel, colored or glazed finishes, with customization options available on request. Configured here as a self-serve wall behind the bar in The Roost, letting guests pour their own wine, glass by glass.
